If you still associate green beans with school dinners, think again. The green bean salad with Comte cheese and walnut dressing, above, is an absolutely divine combination of textures and flavours. And it’s incredibly moreish.
Blanchette Brick Lane: Shoreditch
Chef: Tam Storrar
Need to know: sister restaurant to Soho’s Blanchette, the restaurant was opened in Brick Lane in August 2016, a year ago, by Maxime, Malik and Yannis Alary and lovingly named after their mother. Modern French travels deep into the South of France and North Africa for hot spices and rich tagines and it’s fair to say that the Parisian Belle Époque era is thriving at Blanchette Brick Lane. Chef Tam Storrar learnt to forage with his father, a countryside ranger, who introduced him to nature’s rich abundance and its endless possibilities for food creation. Before running the kitchen at Blanchette Brick Lane, Tam worked as Senior Chef de Partie at Bibendum. He took a year out of the London restaurant scene, in Australia, after which he returned to Bibendum as Senior Sous Chef. before joining Blanchette Brick Lane. Malik is a music maker with a passion for funk soul classics and new wave, which complements Tam’s innovative approach to classic French cuisine perfectly!
